Fat Tail Sheep are legendary for their tails which chefs pay over $60/lb just for the fat in the tail.  The fat melts low and has high oleic acid and similar to Wagyu.  This is a unique opportunity to chow down on some delicious lamb raised at Chef & Restaurateur Erik Sun's private farm.

This is just an example of a carcass; actual fat tail sheep may be larger or smaller than pictured.

We may or may not call it lamb because usually these grow over 12 months (the limit to call lamb)

Will be cut and portioned into retail cuts unless emailed otherwise
